Balsamic Glazed Salmon with Peach Salsa

Baked Balsamic Glazed Salmon

Can you believe this salmon is baked! It’s literally the best (and easiest) way to cook salmon. Cooking large amounts is always a breeze. On another note, this salmon was frozen and came out so tender and flaky. When cooking with frozen salmon make sure to safely thaw first by placing it in the fridge or under room temperature water. Also, allow the salmon to sit at room temperature for 10-15 minutes before cooking.

Peach Salsa

Depending on who you ask the star of this dish might be the glazed salmon but over here it’s the peach salsa. Don’t you love when peach season is here? It really brings out the essence of summer. You’ll need 2 ripe peaches to make this salsa but please make sure the peaches aren’t too ripe because they will be a slimy mess when cutting. The peaches will likely not hold their shape, especially after soaking in all the juices and oil of this salsa.

How To Make Balsamic Glazed Salmon With Peach Salsa

In a small to medium bowl add olive oil, balsamic vinegar, minced garlic, honey, salt and pepper. Whisk together. An easy and convenient way to whip this up is to use a liquid measuring cup with a spout like this.

Add salmon to a zipped plastic bag and then add balsamic mixture over top the salmon. Close the plastic zipped bag (removing most of the air). Allow salmon to marinate for a least 30 minutes in the fridge.

Pre-heat oven to 400 F. In a large bowl add ingredients for peach salsa (peaches, jalapeño, red onion, sweet corn, green bell pepper, cilantro, lime juice, honey, olive oil). Mix until well combined and set aside to let marinate.

Place marinated salmon in the oven and cook for 12-15 minutes or until salmon reaches an internal temperature of 165 F. While the salmon is coking add remaining balsamic mix to small saucepan and cook for 5-10 minutes or until sauce thickens/reduces. Brush on top of salmon when done.

  • Use frozen salmon to enjoy this dish anytime
  • Allow frozen salmon to safely thaw out by placing in the refrigerator or in room temperature water.
  • Allow thawed salmon to sit at room temperature for 10-15 minutes.
  • Place salmon skin side down when cooking
  • Use ripe peaches but make sure peaches are not overly ripe to allow for better cutting.

Complete this meal with a side of rice. Any time of rice will do. this Balsamic Glazed Salmon with Peach Salsa will also work with other grains like cous cous or quinoa. Balsamic Glazed Salmon with Peach Salsa

Ingredients

Balsamic Glazed Salmon

  • 3 4-6 ounce salmon fillets
  • 3 tablespoons olive oil
  • 6 tablespoons balsamic vinegar
  • 5 cloves garlic minced
  • 1 tablespoon honey
  • salt + pepper to taste

Peach Salsa

  • 2 ripe peaches diced
  • 1 jalapeño seeded and diced
  • ¼ cup red onion diced
  • ¾ cup sweet corn
  • ½ green bell pepper diced
  • ¼ cup cilantro chopped
  • juice from 1 lime
  • 2 tablespoon honey
  • 3 tablespoons olive oil
  • salt to taste

Instructions

  1. Whisk together olive oil, balsamic vinegar, garlic, honey, salt and pepper.
  2. Add salmon to a zipped plastic bag and then add balsamic mixture over top of the salmon. Close the zipped bag (removing most of the air). Allow salmon to marinate for a least 30 minutes in the fridge.

  3. Pre-heat oven to 400°F.

  4. In a large bowl add ingredients for peach salsa (peaches, jalapeño, red onion, sweet corn, green bell pepper, cilantro, lime juice, honey, and olive oil). Mix until well combined and set aside to let marinate.

  5. Add salmon to a baking dish or roasting pan. Cook salmon in the oven for 12-15 minutes or until internal temperature reaches 165°F

  6. While salmon is cooking place the remaining balsamic mix and heat in a small pot fo 5-10 minutes or until sauce is reduced or thickened.

  7. Remove salmon from the oven. Plate salmon and add peach salsa on top. Pair with aa side like rice. Enjoy.
