Doesn’t this look delish! One pan meals are simply the best. This time around I’m crushing on One Pan Lemon and Thyme Salmon and Veggies. What makes the recipe is the easy 30 minute salmon marinade using only 4 ingredients.

HOW TO MAKE LEMON AND THYME SALMON & VEGETABLES
This recipe right here is for a healthy one and done meal using only a baking pan. Begin with making this simple marinade. Combine the juice from 1 lemon, olive oil, fresh thyme leaves, and garlic. Using foil or large dish (large enough to hold your salmon) pour marinade and then place fish skin side up in marinade. Placing lemon slices on top of fish is optional. Cover and let sit for 30 minutes. Turn fish over half way through at about 15 minutes).
While fish marinates prep your veggies. Cut bell peppers (a mixture of red, orange, and yellow were used) into small strips, and prepare green beans (stems cut for recipe). Drizzle olive oil on top and season with salt and pepper to taste. Set veggies to the side.
Now onto the best part. Line baking pan with aluminium foil. Parchment paper or a baking mat are will also do. Remove salmon from marinade and place salmon skin side down on baking pan. Cook for 10 minutes at 375 degrees. Remove from oven and place veggies around salmon. Place back in oven and continue to cook for an additional 20 minutes.
