Massaged Kale Salad with Lemon Ginger Vinaigrette

Can’t believe this year is almost over ! But I can believe that lemon and ginger is the perfect addition to oil to make the best vinaigrette.  My love for kale is in spurts and right now I’m definitely in a kale kinda mood. (Que Beyonce’ music while on my balcony).

Kale Salad with Vinaigrette Dressing

Salads are the best. This one calls for apples, blueberries, pears with feta cheese. To prepare I start off with freshly washed kale cut in bite sized pieces. Only thing about Kale is that it can be quiet chewy and bitter. To make it easier to eat and tasty the kale must be massaged. This may sound like a complicated thing but massaging kale is quite simple.  Take fresh kale and rub or mash together for several minutes using your hands or utensils. In this case, I added the lemon ginger vinaigrette before messaging to infuse the kale with flavor. After a few minutes a miracle happens. The once stiff leafy green turns darker, much moreoft, with a silk looking texture.

Kale Salad with Vinaigrette Dressing

Just dump your remaining ingredients in the bowl and sprinkle feta on top. This is a quick salad that can be customized with whatever fruit you have on hand.  Adding lemon and ginger to olive oil is simply amazing. This dressing is definitely worth making to spruce up a simple salad. One thing about kale is that it stays fresh even with the vinaigrette even when you store it. It tastes just as good as left overs as it did the first time around.

Kale Salad with Lemon Ginger Vinaigrette

Ingredients
  • 3 cups kale
  • 1 medium apple
  • 1 medium pear
  • 1/2 cup of blueberries
  • 1/4 cup of feta cheese
  • 1/2 cup olive oil
  • 3 tbsp lemon juice
  • 2 tsp minced ginger
Instructions
  1. Wisk together olive oil, lemon, and ginger in small bowl. Set aside.
  2. Take freshly washed kale, cut into bite sized pieces.
  3. Sprinkle lemon ginger vinaigrette onto kale.
  4. With bare hands or tongues roughly toss kale in vinaigrette.
  5. Massage kale for several minutes or until kale turns darker and less stiff
  6. Add apples, pears, blueberries to salad. Sprinkle feta cheese on top.
