Today I’m sharing a super easy recipe for Lemon Kale Pasta that can be ready in just 30 minutes. It’s full of flavor and with punches of kale mixed about. Just imagine sharp cheese with spicy red flakes and tangy lemon. In other words it’s an explosion for your taste buds. Super yummy!
This week I’m getting back in the grove of things since returning from FNCE in Chicago. My time was filled with sessions, exploring the expo, roaming the city of Chicago, and most importantly networking. Over this past year I have interacted with so many people online. FNCE was the perfect place to finally meet most of my social media peeps for the first time!
In total I have attended FNCE three times. This year was my first time going as a Registered Dietitian. As an established professional my focus for FNCE changed quite a bit this year. My focus revolve around matching to a dietetic internship and then starting my career/finding a job. Now that I’ve completed both I found myself exploring my creative side like learning how to transition towards a non traditional career (specifically focusing on blogging, social media platforms, and possible private practice).
It felt quite nice to be more casual. Having this mindset allowed me to really enjoy being in Chicago and soak up all the information given. More importanly, being at FNCE really inspired me to continue doing what I love. Although I have learned a lot over time about blogging, photography, and social media there is still so much more to learn!
Now back to this pasta!
I can admit I had this mindset that pasta needed to be drenched in sauce in order to eat. A great alternative to cut calories is to keep it simple and add pasta coated in a bit of olive oil and sauteed veggies, herbs, and spices for a refreshing meal. This Lemon Kale Pasta does not disappoint. It’s
savoury
cheesy
with a bit tartness from the lemon
and a pinch of spice…
Is that even possible? YES it is!
Not only is this recipe quick to make with just 30 minutes but it’s affordable. A half pound of pasta (half pack of thin spaghetti) is a dollar in most areas, kale can be bought whole (in bunches) at your local grocery for a cheaper price, and lemons and bulbs of garlic are generally under a dollar each.
