Thai Peanut Sauce

This 80-degree weather in the fall is throwing me off but I can’t complain. I’ll take whatever I can get. These days I’m gravitating towards quick and light bowls that I can drizzle sauce all over like this Thai Peanut Sauce.  I can always count on a good peanut sauce to add flavor to burgers, dip with vegetables, or use in a salad. More and more I find myself making things from scratch that I would otherwise buy pre-made in store. If you can it’s so much better to make it yourself. With only 8 ingredients, you too can have Thai Peanut Sauce ready in 10 mins.

Thai Peanut Sauce:

Creamy Peanut Butter

Reduced Sodium Soy Sauce

Rice Vinegar

Honey

Garlic

Lime

Ginger

Red Curry Paste

Thai Peanut Sauce

Making Thai Peanut Sauce is easy peasy. Literally just throw the ingredients in a blender/food processor and let it do.. it’s..thing. If the sauce is too thick, you can slowly add a little water to thin it out. Place your leftover sauce in an airtight container (mini Mason Jars are everything!) and store in the fridge for about a week.

There are several ways you can enjoy this peanut sauce. You can eat peanut sauce with noodles, dip with fresh vegetables (like broccoli, pepper, and carrots), dip spring rolls, add to sandwiches and wraps, or drizzle on top of salad or grain bowl.

Anywho, I started reflecting on how much has changed this year. When I decided to get serious about my photography and blogging I set goals for myself to post to Mash & Spread once a week and post ALMOST every day on Instagram. I’ve failed, well kinda.  Weekly blog posts have not been done.  Some days I can post daily for a week straight on the gram and other days I’m straight struggling ya’ll. Still finding balance and ways to organize my ideas and time.  Overall though I’m really pleased. I’m talkin’bout the progress I’ve made with the quality of my photos and the engagement I receive daily. It’s truly motivating when I’m stuck in rut and I’m like WTF am I doing.

My free time is already limited but I wouldn’t have it any other way. What can I say, I love to stay busy. Follow my journey on Instagram @Mashandspread.

 

 

Thai Peanut Sauce

Thai Peanut Sauce

Prep Time 6 minutes

Ingredients

  • ½ tsp garlic or 1 garlic clove
  • 1 inch piece of fresh garlic
  • Juice from 1 lemon
  • 1 tbsp red curry paste
  • 2 tbsp honey
  • ½ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • Water to thin as needed

Instructions

  1. Add all the ingredients to a blender or food processor. Mix until well combined. Add water to thin out peanut sauce if needed.
