White Bean Kale and Sausage Bowl

Warm & Cozy White Bean Kale and Sausage Bowl

One pot meals are the ultimate in convenience and ease when it comes to cooking, and this white bean, kale, and sausage recipe is no exception. With just a few simple ingredients, you can have a delicious and comforting meal ready in no time.

This recipe combines the delicious taste of Italian sausage, with creamy white beans, and hearty kale. The diced tomatoes add a nice acidity and sweetness to the dish, which balances the flavors and give a nice texture. The chicken broth adds depth and richness to the soup. This dish is a great option for a cold winter day, it’s comforting and satisfying, and it can be easily adapted to your preferences. Serve it with some crusty bread for a complete meal.

Ingredients

Italian sausage

½ onion chopped

3 cloves of garlic

2 (15 oz) cans white beans, drained and rinsed

4 cups kale. Chopped

1 can diced tomatoes

4 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried oregano

grated parmesan for garnish

How to Make White Bean Kale & Sausage Bowl

Prep: Smash ⅓ of the white beans using a fork and set aside.

Brown: Heat a large pot or Dutch oven over medium heat. Pour 1 tablespoon oil and cook the sausage for 4-5 minutes or until browned. Remove sausage and set aside.

Sautee: Pour the remaining olive oil into the Dutch oven. Add the diced onion to the heated Dutch oven and cook until softened for about 4-5 minutes. Add garlic for to cook for up to 1 minute.

Stir: Stir in the diced tomatoes, ⅔ of the remaining white white beans, thyme, oregano, salt, and pepper.

Pour: Pour in the chicken broth and smashed white beans and stir until well combined. Reduced heat to low medium.

Cook: Let the mixture cook for 3-5 minutes, should reduce slightly. Stir in kale and cook for 2 minutes. Kale should start to wilt.

Serve: Serve hot topped with parmesan cheese and toasted crusty bread on the side.
