It’s something about feta cheese cheese that does something good to me.
It’s a instant flavor booster with any dish. This Watermelon Feta Salad with Balsamic Vinaigrette is a light but tasteful salad using only 6 ingredients. 2 of these ingredients required only for the dressing. Sweet watermelon +tangy feta cheese+ sweet and tart balsamic vinaigrette is the perfect combo.
Watermelon is just about the only fruit I can mindlessly eat a ton of. No surprise I added it to this salad.
Start with you watermelon by cutting into small bite sized cubes. Prep you salad with a bed of spinach and arugula, lay your watermelon on top, and sprinkle that feta cheese and almond. In jar with a lid or any other container combine the vinegar and oil. Shake until well combined. Refrigerate your left over vinaigrette and shake it up when ready to re-use.
