The best meals are one pot meals. Amiright?! Something about using one pot for an entire meal is quiet satisfying especially when thinking about the dishes and clean up later. It’s certainly easier when it’s all said and done.
Soups like this chicken and Rice Soup is exactly what I need to keep me warm as the weather get colder.
The Best Rice for Soup
Most types of rice will work for this soup. For this recipe, I used Jasmine rice (a long grain rice). Some rices aren’t as recommended like brown rice because it takes longer to cook.
The Best Type of Chicken for Soup
What’s the best type of chicken to use for this recipe? Honestly, it could be anything you have on hand. I like skinless chicken things (with the bone in). While making this soup the chicken will cook directly in the liquid until done and then shred into pieces. Skinless bone in chicken thighs are optimal. You can sub with boneless chicken thighs if necessary.
Why don’t I prefer chicken breast? Well chicken breast does not really shred. Instead it would be small chopped pieces of chicken.

How To Make The Best One Pot Chicken and Rice Soup
Add oil to a large pot or dutch oven over medium heat. Add onion, sautee for 3 minutes. Next add garlic and continue to sautee for up to 2 minutes. Then add carrots and celery, chicken broth, lemon juice, parsley, thyme. Stir to evenly mix everything together. Add chicken to pot. Cover let simmer for 30 minutes.
Remove chicken from pot. Use a 2 forks and or a knife to shred chicken into small pieces. Remove the bone. Transfer chicken back to pot. Taste and season with salt/pepper. Serve with extra garnish of parsley.
Tips
Save Time: Use cooked rotisserie chicken.
Storage: Leftover soup can be stored in an airtight container in the fridge for up to 1 week or in the freezer for several months.

- 4 Skinless Chicken thighs Bone in
- Salt
