The very first post of 2018 is a simple but delicious recipe for roasted garlic hummus. Hummus is one snack I could never get tired of. It’s great with pita chips or fresh vegetables like broccoli and bell peppers.
Roasted Garlic Hummus only needs 8 ingredients and takes about an hour to make from prep time for finish. What takes the longest is roasting the garlic. Start by peeling the flaky layers of a bulb of garlic. Make sure to keep the garlic cloves intact. Next cut off about ¼ from the top of the garlic. Drizzle extra virgin olive oil on top. Wrap in aluminum foil and roast in oven for about 40-45 minutes. Garlic should be soft to touch. Remove from oven and let sit for a couple minutes. Extract the garlic cloves by squeezing them out.
Place chickpeas, roasted garlic, extra virgin olive oil, lemon juice, tahini, ground cumin, water, and salt in a food processor Mix for about 2-3 minutes or until smooth. If the mixture is too thick add water.
