It feels so good to be back with an insanely delicious One Pan Cilantro Lime Chicken with Orzo and Broccolini.
Whew! The name is a mouthful.
This meal is meant to trick you into thinking it’s some magical, advanced level sorcery when really it’s about as simple as can be.
One pot meals have a special place in my heart. Who has time to clean multiple pots and pans when cooking every day?
Not me and certainly you don’t have to either!
For this dish I wanted a lighter pasta. What better choice than orzo. It’s small in size but capable of soaking in so much flavor! If you’re tempted to cook the orzo first, DON’T. The first and the most important step is to prep and start the chicken.
So let’s get straight to it!
HOW TO MAKE ONE PAN CILANTRO LIME CHICKEN WITH ORZO AND BROCCOLINI
First, in large bowl combine olive oil, lime juice, lime zest, ground cumin, red pepper flakes, minced garlic, and chopped cilantro. Dip your chicken in the bowl and let marinate for at least 30 minutes. I prefer to transfer chicken to zip lock bag and throw it the fridge.
Shallow pans and dutch ovens are ideal for this type of meal but certainly if a tall pan is all you have it will work as well. The key is to have a pan that is large enough to evenly place the 4 pieces of chicken without overlapping.
Over medium heat pour olive oil and place chicken skin side down. To create a good sear put another pan overtop the chicken to cook evenly. Cook for about 12 minutes or until top of chicken is completely golden brown. Flip chicken over and cook for 2 minutes. Note the chicken will not be done. Remove chicken and set aside.
Add 1 tablespoon minced garlic back to pan and sauté for 1 minute. Then add the orzo to the pan. Continue to sautée for another 3 or so minutes or until the orzo is toasted.
Next, pour in the chicken broth and add broccolini. Mix well. Let simmer on stove top for 5 minutes. Place chicken back in pan and transfer to oven. Cook for 15 minutes. The orzo should absorb most of the liquid and the chicken will continue to cook until done.
