You can never go wrong with classic chocolate chip cookies. If I could only bake one thing for the rest of my life I would without a doubt choose chocolate chip cookies. It’s the way to my heart. Im not an avid baker by any means. If you notice I don’t have a ton a baking recipes on Mash and Spread. With more practice, I’m hoping to change that by doing more baking and incorporating more baking recipes!
How to Make Olive Oil Chocolate Chip Cookies
Making chocolate chip cookies with olive is not really much different from making regular cookies. I like to prepare all of my ingredients and separate them into two groups, dry ingredients and wet ingredients. You’ll need 2 bowls, preferably one large bowl and the other at least medium sized.
Gather all of the wet ingredients in a large bowl: olive oil, light brown sugar, granulated sugar, vanilla extract, softened butter and egg. Mix throughly until evenly combined. Next gather the dry ingredients in the medium sized bowl: flour, baking powder, baking soda, and salt. Mix dry ingredients together. Fold the dry ingredients in to the bowl with wet ingredients. Lastly add the chocolate chips or morsels to the bowl and mix.
Use a cookie scoop to form chocolate chip cookies and place on a lined parchment paper about 1 inch apart. Cover and let sit in fridge for at least 1 hour or overnight. Remove from fridge. Pre heat oven to 350 and bake cookies for 12 minute or until cookies turn light golden brown. Remove from oven and sprinkle sea salt flakes on top.
Tips For The Best Cookies
Refrigerate cookie dough balls for at least an hour or overnight.
If you don’t have a cookie scoop you can use a regular spoon. Just know that the cookies may not be shaped perfectly round. Cookie scoop help ensure uniformly sized and perfectly round cookies.
Prepare for these cookies a head of time by mixing the dough. You can freeze the dough and take it out once youre ready to bake delicious cookies.
To freeze the dough.
Form: After folding the dry ingredients into wet ingredients and the dough is mixed. Use a cookie scoop to make perfectly sized dough balls.
Line: Line the dough balls in a single layer on a baking sheet lined with parchment paper. Make sure that the dough doesn’t touch.
Freeze: Transfer the baking sheet to the freeze and let sit for at least one hour or until completely frozen.
Store: Once frozen remove from baking sheet and place in a zipped plastic bag or air tight container. Frozen dough should keep for 3 months.
When you’re ready to bake remove from the freezer, let sit in fridge for 24 hours, and bake cookies per usual.

- 2 cups all purpose flour
- ½ teaspoon baking powder
- ¾ teaspoon baking soda
- ½ teaspoon salt
- ½ cup olive oil
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 4 teaspoon butter softened
- 1 egg
- 6 ounces chocolate chips or morsels
Instructions

In a large bowl add melted butter, olive oil, egg, brown sugar, granulated sugar, and vanilla extract. Mix until well combined. In a separate bowl add flour, baking powder, baking soda, and salt. Fold the dry ingredients (flour mixture) into the wet ingredients. Then add chocolate chips and fold.

Use a cookie scoop to form cookies. Place on lined baking sheet about 1 inch apart. Bake for 12 minutes or until cookies are nice golden brown. Remove from oven. Let cookies cool down. Sprinkle with sea salt.
