Happy Saturday! Today I’d thought a share a simple salad that I love to make, Kale Apple Salad with Pomegranate Dressing. The reason why I love it so much is because it has several seasonal ingredients that are around this time of year. We all know the best place to get good seasonal food is at the local farmers market. Here in Washington, DC there are more markets than I can count. This gives me plenty options for fresh produce and local eats.
Fresh Farm is a nonprofit organization that operates multiple farmers market in the DC area. I love visiting their many markets when out and about in the city. This time around, I decided to pay a visit to the H Street market located in Northeast, Washington DC. It’s nestled on a block off the H street corridor in between some of my favorite stores. In December there are several produce options I’m bound to come across at the market (like kale and apples). Why not combine the two for a yummy salad. Also available but not really local to where I live are pomegranates. Most Saturday mornings I love stopping by the local market before starting my day. This habit has turned into a life of its own and I now have an entire separate Instagram page and blog called Farmer’s Market Society where I post my curated content from exploring the different markets in DC.
Now that I have everything I need I’m ready to make this delicious, seasonal, market inspired salad.
How to make Kale Apple Salad with Pomegranate Dressing
Start by washing and destemming the kale. Chop into bite sized pieces. In a jar add the honey, white wine vinegar, olive oil, pomegranate juice. Close jar and shake well. Pour pomegranate dressing over kale. Add sliced apples, extra pomegranate seeds/arils, feta cheese crumbles, and pecans. Enjoy!
Kale Apple Salad with Pomegranate Dressing
Ingredients
Kale Apple Salad
- kale- destemmed and chopped
- 2 apples, sliced thin
- ½ cup pomegranate arils (seeds)
- ¼ cup feta cheese crumbles
- ¼ cup pecans
Pomegranate Dressing
- 2 tablespoon honey
- ¼ cup white wine vinegar
- ¾ cup extra virgin olive oil
- ½ cup pomegranate juice
- salt and cracked pepper to taste
Instructions

In a large bowl add kale. Place honey, white wine vinegar, extra virgin olive oil, pomegranate juice in a jar. Close the lid and shake dressing until well combined.

Pour dressing over kale. Toss dressing and kale until kale is well coated.

Add sliced apples, pomegranate, feta cheese crumbles, and pecans.
