It’s no secret I love pancakes. Since I started making my own from scratch I haven’t bought a frozen pancake (or waffle) since.
I’m sharing my go to recipe for easy fluffy pancakes when I’m craving a stack.

It’s all in the baking powder.
Use fresh baking powder when making pancakes or anything else for that matter. Test your baking powder for freshness by placing ¼ cup of warm water in a small bowl. Add a teaspoon of baking powder. If it’s fresh the water will start to fizz. The more bubbles the more fresh your baking powder. Make sure to not use cold water as the baking powder will not react.
Eggs
If possible use room temperature eggs. If you don’t have much time place your egg in warm temperature water for 5 to 10 minutes. This is to prevent the butter from curdling due to the contrast of the cold egg and melted butter.
Be patient
When the batter is all mixed let it sit for 5-10 minutes.
