This week has been extremely busy for me. Currently I work in a medical facility and we are approaching survey time. This means completing countless audits and spending more time at work. I was looking for an easy but flavorful dish to prepare for the week and made Asparagus Shrimp Scampi.
Using only 1 pot this dish can be ready to eat in about 40 minutes. To cook I actually used a large cast iron skillet instead of a large pot. This was not by choice. I currently don’t have a large pot but will purchasing new cookware soon!
To prep, cut the fibrous ends of the asparagus. Then cut each spear in 3 equal/short sized pieces. Placed to the side.
Then fill the cast iron skillet with water up till a ¾ inch from the top. Once water came to a boil I added the linguini pasta. The whole box of linguini will most likely not fit. You must cook in batches if using a shallow pan like a cast iron skillet.
For convenience use the large pot and follow the directions on the package to cook the noodles. Once noodles are done drain and set aside.
Using the same pan/skillet add the butter over medium heat. Once the butter is melted add minced garlic. Sauté for approximately one minute.
When garlic becomes translucent line the pan/skillet with shrimp. Be sure to cover the entire bottom of the pan to allow for easy even cooking. Flip over after 2 mins. Cook until shrimp is just pink. Season with salt and pepper, red pepper flakes. Add the olive oil, lemon juice, white wine and stir together.
Next add the noodles and asaparagus. Mix together using tongues or spatula. Top the Asparagus Shrimp Scampi with parsley and Parmesan cheese and serve.
