This deliciously creamy One Pot Lemon Ricotta Pasta is ready in under 30 minutes. It’s a light but hearty pasta dish with an irresistibly fresh lemony taste.

How To Make One Pot Lemon Ricotta Pasta
Cook pasta in a large pot according to instructions. Reserve 1 cup of pasta water. Drain pasta and set cooked pasta aside.
In the same pot add ricotta cheese, parmesan cheese, lemon zest, lemon juice, salt, and pepper. Stir. Pour reserved pasta water while stirring until smooth consistency. Add cooked pasta and continue mixing. Serve with red pepper flakes and more parmesan cheese.
Tips for The Best Lemon Ricotta Pasta
Once the pasta is done reserve about 1 cup of pasta water, this will be used to help thin out the lemon ricotta sauce.
Keep extra parmesan cheese to top off your pasta in the end.
Make an addition and add leafy greens like arugula, kale, or spinach.
What Type of Pasta Can You Use?
For Lemon Ricotta Pasta I love to use Mezzi Rigatoni. It pairs really with this creamy sauce. If you don’t have Mezzi Rigatoni any other pasta will do like penne, elbow, or even spaghetti pasta.
