Make Ahead Breakfast Sandwiches
What You Will Need
large bowl
knife
8×8 baking pan
round cookie cutter
Ingredients
English muffins- I used whole wheat muffins for this recipe. I love to keep extra bread in the freezer so I can make a sandwich at any time.
eggs- seasoned, scrambled, and baked with chopped spinach to form round egg muffins
milk- for softer eggs
turkey bacon- for protein.
avocado- healthy fats and adds texture
cheese- cheddar cheese slices
fresh spinach- chopped and added to the eggs.
salt/paper etc- to season eggs
How to Make Make Ahead Breakfast Sandwiches
Crack eggs, season with salt and pepper, and mix. Add chopped spinach to the bowl. Spray 8×8 baking dish with cooking spray. Pour egg mixture into baking dish. Cook for 12-15 minutes or until the center is set. While eggs are in the oven cook bacon and toast English muffins. Remove eggs from the oven and allow cool for a few minutes. Use a round cookie cutter to cut a round shape for egg sandwiches. Prepare breakfast sandwich by stacking egg, turkey bacon, cheese, and avocado.

Wrap and save-Once completed wrap the sandwiches in parchment paper and keep in the fridge
No cookie cutter, no problem– If you don’t have a cookie cutter you can use another round object that can form round egg patties. Another option is to skip it all together. Use a knife to cut a square shape to fit the English muffin.

Preheat oven to 375°F..Crack eggs, season with salt and pepper, and mix. Add chopped spinach to the bowl.
