What’s one thing in season right now I honestly can’t get enough of? Berries! I’d eat them on almost anything. I made Banana Pancakes with Yogurt, Blueberries, and Blackberries so you know I’m for reals.
First, lets focus on the cakes! These ‘nana pancakes only require 3 ingredients.
Egg
Flour
Banana
That’s it folks.
I like to focus on simple recipes because it’s what I’m comfortable with at the moment. Theses pancakes are simple, healthy, and light. For those who may want a gluten free option replace the flour with gluten free oats or just skip it in general. Honey is great addition to natural sweeten and help mask the banana taste.
Now back to the berries. I was provided a ton of yogurt and other goodies from siggi’s for my submission to their Instagram contest for their first ever cook book. There were flavors I’ve never even seen before and also goodies I love. You guessed it, blueberry.
Why not make these scrumptious pancakes and top them with my fave! Can’t let all this yogurt I have go to waste.
Start by taking a ripe banana and mash it in a bowl. Add egg and flour to mashed banana. Mix all ingredients until well combined. Lumps from the banana may appear so don’t think it needs to be perfectly smooth. Heat a non stick skillet over medium heat. Pour batter on to heated skillet. Making patties about 3 inches wide yielded roughly 3 pancakes for me. This can vary depending on the size of the banana and the size of pancake you prefer. Go crazy with toppings like blueberry yogurt, blueberries, and blackberries and enjoy.
