A Watermelon Cucumber Cooler Mocktail is a very refreshing watermelon and cucumber juice mixed with a hint of lime and basil. The hint of herbs adds an extra layer with a slight sweetness added that can be enjoyed by itself over sparkling water for a fizzy drink.
Watermelons, cucumbers and limes — oh my! When this Watermelon Cucumber Cooler Mocktail is in front of me, all I can think about is a hot summer day wearing sunglasses and my hair up while relaxing on a nice lawn. If you are like me you prefer drinks on the lighter side… a.k.a non-alcholic drinks that you can enjoy. So why not enjoy something tasty and refreshing?
Mocktail recipes have been seeing a lot of love on our social media channels lately so it’s a no-brainer to continue to give the people what they want with another one. What’s better than fresh fruits in cocktails, especially during the prime of summer. What’s even better is a drink where I can drink with not so much sugar or where you can control how much sugar s used. So, whipping up this Watermelon Cucumber Cooler Mocktail can be enjoyed with no added sugar or just a little (depends on your preference).
Ingredients
Fresh watermelon (seedless)
English cucumber
Lime juice
Fresh basil
Sparkling water (optional)
Honey (optional)

Large knife
Large pitcher
Large spoon
How To Make A Watermelon Cucumber Cooler Mocktail
Slice watermelon into bite-size chunks (remove rind). Use a peeler to peel the outer skin from the cucumber and cut it into small chunks.
Add watermelon, cucumber, and fresh basil to blender and puree. This step of pureeing should not take long since food is fresh and not frozen (less than a minute). Set a large fine-mesh sieve over a pitcher. Pour puree mix through the sieve. Use or back of a large spoon to press any remaining juice into the pitcher.
In a small bowl add lime juice and honey (optional) and stir to combine. Add lime juice and honey to a bowl of watermelon and cucumber. Adjust sweetness by adding more honey per taste.
Assemble the drink by placing several ice cubes in a drinking glass. Pour watermelon cucumber juice into a drinking glass. Add a bit of fizz by pouring sparkling water to each drinking glass. Use a small spoon to stir. Garnish with extra limes and basil and enjoy!
Tips for The Best Watermelon Cucumber Cooler Mocktail
Should I use fresh or frozen fruit? Fresh fruit (watermelon) is recommended
Should I use dried basil? Dried basil is not recommended because it will be difficult to extract and flavor while mixing. Fresh basil leaves are best for more flavor.
Can I use bottled lime juice? Absolutely. Bottled lime juice is a convenient way to keep lime juice on hand to use.
Can I make this drink ahead of time? It’s best to make this drink during the time of serving. As this drink sits the juice will start to separate which may or may not affect the taste. For best results store all of your ingredients properly and prepare this drink fresh.
