Tahini Goddess Bento Box

Here’s a simple yet oh so convenient lunch idea with a variety of chopped veggies and protein with a tangy Tahini Goddess Dressing and Marinade Bento Box by Drew’s Organics.

 

 

 

Salads are meant to be enjoyed. That includes healthy ones with all the veggies and your favorite dip. Instead of lugging the plastic container I opted for a bento box.

This Tahini Goddess Dressing is the perfect addition to my home made salads. It has that classic tahini taste with a kick of bold flavor that I love. If you prefer a light dressing it’s also great for dipping fresh veggies like carrots, broccoli, and cauliflower.

Why a Bento Box?

When I need a perfectly portioned meal I grab a bento box. Working long days can be hard and with that I get tempted. For me, temptation is random snacking from the vending machine and eating extra food from the kitchen.

If you didn’t know, I work as registered dietitian by day. I literally am involved with food ALL DAY. It’s makes for interestingly cool career choice. Working at medical facility I prefer to bring my lunch when I can.

Meal prepping in any form (including this salad) help me stay on track with my goals and helps me save time during the week. Having a small refrigerator in the office is a life saver too! It may be small but I can house a few of my favorite things and my home made lunch for the day. This Tahini Goddess Dressing is one of them.

Tips:

Plan out your in advanced and batch make your bento box like I did.

Gather all the veggies you have on hand. Feel free to add additional sources of healthy fats and protein like hummus or a handful of nuts.

What You’ll Need?

Bento Box or Container

Knife

Colander

Cutting Board

The great thing about bento boxes is that the possibilities are endless. This perfectly wrapped box is full of veggies and flavorful yet tangy Tahini Goddess Dressing that pairs so well.

There’s really no chance to ever mess this up! The longest part of making this salad is prepping the vegetables.

How to make Tahini Goddess Bento Box

First gather all your veggies. I used fresh mix of greens, mini cucumbers, grape tomatoes, chick peas with boiled eggs. Make sure to cut all your veggies into small bite sized pieces. I used mini cucumbers to avoid having large cucumber slices in my box. Rinse canned chickpeas with water in a colander.

Simply arrange your salad by placing greens first and layering on top in different rows the boiled eggs, grape tomatoes, cucumbers, and chickpeas. Then pour Tahini Goddess Dressing in a small portable container. Prep by making a few extra and consider lunch made for the week!

Ingredients

  • 1.5 cups Drew's Organics Tahini Goddess Dressing and Marinade
  • 6 cups salad greens
  • 4 cup boiled eggs
  • 1.5 cups grape tomatoes
  • 3-4 mini cucumbers
  • 1.5 cups chickpeas

Instructions

  1. Chop vegetable into small bite sized pieces

  2. Arrange bento box with a bottom layer of greens for the salad. On top of greens arrange a row of boiled eggs, then grape tomatoes, mini cucumber slices, and chickpeas.

  3. Add Drews Organics in a small portable container and add to corner of bento box.
