Ingredients

  • 1 cup milk
  • 2 cups old fashioned oats
  • 2 large eggs
  • ½ cup melted coconut oil cooled
  • 3 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Add milk, old fashioned oats, eggs, coconut oil, baking powder, salt, and vanilla extract to a blender. Mix until just combined (up to 30 seconds). Check waffle batter. Continue mixing in 10-15 second increments as needed.

Recipe Notes

For gluten waffles use gluten-free oats. Keep waffles as crisp as possible by placing cooked waffles in a heated space (oven or toaster oven at 200 F) until ready to eat.
