Easy Pumpkin Pancakes

Super Easy Pumpkin Pancakes are here ready for a perfectly fall themed breakfast. Soft and fluffy made from scratch pancakes with a hint of the pumpkin and seasoned with warm spices will delight your taste buds.

Easy Pumpkin Pancakes

What I have here has to be the BEST EVER seasonal pancakes. It’s the first day of fall so I find it extremely appropriate to share a tasty fall inspired recipe to ring in the new season. Believe it or not hints of fall have already started trickling in. Within the last week the temperature drops in the weather have a made a few appearances. It was definitely a pleasant surprise. I absolutely love fall weather! It’s my favorite season of the year. I love fall for all the usual reasons-> hello sweater weather, boots, and cool temps! But most importantly it’s a reminder that my birthday is coming!

What You’ll Need:

Large bowl for dry ingredients

Medium to large bowl for wet ingredients

Whisk or large spoon

Griddle or skillet

Measuring cup

How To Make Best Pancakes!

In a large bowl add all purpose flour, baking powder, brown sugar, cinnamon, nutmeg, cloves, and salt. Mix until well combined. In a separate bowl add milk, pumpkin puree, egg, and vegetable oil. Whisk until well combined. Pour wet ingredients into bowl with the dry ingredients and mix until just combined (do not overtax).

Heat a lightly greased griddle or skillet over medium heat. Use ¼ cup measuring sc

oop to make batter and pour onto the hot griddle or skillet. Cook pancakes for 1-2 minutes and flip. Continue to cook for 1-2 minutes.

Tips:

Make sure to use a flat skillet for to allow these pancakes to cook in even heat.

Can these pancakes be made into small silver dollar pancakes? Absolutely Yes! Just pour the desired amount onto the skillet or griddle. Be aware that small sized pancakes cook quicker so keep an eye out on them when ready to flip.

Can these pancakes be made into waffles? Of course but know that usually a pancake recipe will have to be slightly adjusted to make a good waffle. This recipe has not been tested as a waffle.

Can I freeze pancakes? Yes. Flash freeze pancakes by placing on baking sheet. Freeze for up to 1 or 2 and then transfer to a plastic bag and place back in the freezer.

Ingredients

Dry Ingredients

  • 2 cups all purpose flour
  • 2 tablespoon baking powder
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon salt

Wet Ingredients

  • 1.5 cups milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoon vegetable oil

Instructions

  1. In a large bowl add all purpose flour, baking powder, brown sugar, cinnamon, nutmeg, cloves, and salt. Mix until well combined. In a separate bowl add milk, pumpkin puree, egg, and vegetable oil. Whisk until well combined. Pour wet ingredients into bowl with the dry ingredients and mix until just combined (do not over mix).

  2. Heat a lightly greased griddle or skillet over medium heat. Use ¼ cup measuring scoop to make batter and pour onto the hot griddle or skillet. Cook pancakes for 1-2 minutes and flip. Continue to cook for 1-2 minutes.
