No Baking Is Required
This is a simple no-bake recipe and only requires the freezer. If you’re like me you had to rearrange some things to make enough room to store a cutting board.
What You’ll Need:
Tools
Cutting Board (if no cutting board a large baking tray will be a great alternative)
Parchment Paper
2 medium-sized microwave safe bowls
Sharp knife
Ingredients
Fresh bananas: I like to use large bananas that are just ripe.
Peanut Butter: Any peanut butter will do. For extra texture try this with crunch peanut butter
Semi Sweet Chocolate Chips: for the final layer
Coconut Oil: to help melt to chocolate chip and make it more spreadable
How to Make Chocolate Peanut Butter Banana Bars
Line: Place parchment paper on top of a cutting board or baking tray. Cut the banana into round slices and line in a single layer forming a rectangle. Make sure to place the banana slices as close as possible. Due to the shape, there will be small gaps in between.
Melt: Place peanut butter in a medium-sized microwave-safe bowl. Microwave in 30-second increments until just melted.
Layer: Pour a layer of peanut butter ontop of bananas. It is important to completely cover the bananas in peanut butter. Use a butterknife or rubber spatula to spread evenly. Place in the freezer for a minute or two while melting chocolate.
Melt: In another medium-sized microwave-safe bowl add chocolate chips and a spoonful of coconut oil. Heat in microwave for 30 seconds and then 20-second increments until just melted. Stir the chocolate until it has a uniform liquid texture.
Layer: Remove banana and peanut butter from the freezer. Pour a layer of melted chocolate on top of peanut butter. Spread evenly using a butter knife or rubber spatula.
Freeze: Transfer to the fridge for at least an hour or until frozen.
Tips For The Best Treat!
Freezing the banana and peanut butter for a minute or two can help prevent the chocolate from mixing with the peanut butter layer while spreading.
When completed finished and in the freezer to set. The bananas are technically covered and will be the last layer to freeze. After an hour the chocolate and peanut butter will likely be frozen and the the banana slices will be semi frozen. I personally think this is the best! You won’t have to wait for it to thaw out as much.
How To Store
Place in a freezer-safe container or zipped plastic bag for up to 4-5 days.
