A good breakfast sandwich never goes out of style. Really, its what breakfast goals are made of. Here is a homemade recipe that’s worthy to be on any restaurant menu. Made with the perfect fried egg, creamy avocado slices, cuts of turkey bacon, and Nature’s Green Kale roasted to a crisp for the perfect crunch. It’s basically like a sandwich with chips, only grown, with kale chips. Picture your child hood but reinvented for your adult self.
Why kale greens? It was a no brainer for me. I was looking to add some kick to my sandwich and kale immediately came to mind. Nature’s Greens has a nice sized bag ready and triple washed and chopped. I’ve noticed that my local Harris Teeter sells the smaller bags which is perfect for me.
February has turned out to be a busy month for me. Between traveling, working my day jobs, and managing Mash and Spread. Through everything I’m grateful to have these opportunities but it’s important to be mindful of how it affects you physically and also your mental health. Stress from a busy schedule and heavy workload can become overwhelming, easily trigger anxiety, affect my daily mood, and send me into a spiral of procrastination. I deal with this by organizing my calendar to be aware of everything I have going on and knowing when to take a break. That may mean saying no when needed, negotiating later dates to do projects, or just spending time away to clear my mind. The hardest part is first realizing that something is wrong. Talking with a health professional to get the support you need can really help give you the tools to manage what’s going on in life.
That’s why I’m so excited for what’s to come in 2020. I feel better equipped to handle all my responsibilities and share with you all whats to come for Mash and Spread.
How to make this Breakfast Sandwich with Crispy Kale
Pre heat oven to 300 degrees F. Wash and dry Nature’s Green’s kale greens. Toss in olive oil, salt, and pepper. Spread evenly on baking sheet lined with parchment paper. Roast in oven for about 15 minutes or until kale becomes crispy.
Over medium heat in a skillet, cook turkey bacon according to directions. Set aside.
Wipe/clean skillet used to cook turkey bacon. Place back on stove over medium heat. Crack 2 eggs and cook sunny side up in skillet. Cook for up 2-3 minutes or until egg white starts to set. Remove eggs from skillet. Toast bread of choice.
Construct breakfast sandwich by placing toasted bread first, then slices of avocado, next crispy mustard greens, then fried egg. Finish with placing the remaining toasted bread on top. Enjoy.

- 2 bunches Nature’s Greens Kale Greens
- 4 slices of turkey bacon
- 2 eggs
- 4 slices of bread
- 2 slices of cheese
- salt and pepper
- 1 avocado, sliced
