Baked French Toast Muffins

bread-

brown sugar-

How to Make Baked French Toast

Prep:

Preheat the oven to 350 F. Grease a 12 tin muffin pan with cooking spray and set aside.

Mix:

In a large bowl add eggs, milk, vanilla extract, brown sugar, and salt. Stir untll well combined. Chop challah bread into 1 inch square pieces. Place in a large bowl.

Combine:

Pour egg-milk mixture on top of bread.Use hands to toss around and evenly coat.

Assemble:

Transfer bread pieces to the greased muffin pan. Distribute evenly.

Make Topping:

Add brown sugar, cinnamon, and sugar to a medium sized bowl and mix. Add topping ontop of the bread pieces.

Bake:

Bake in oven for 25 minutes or until tops are golden brown.

Ingredients

  • 5 large eggs
  • 1 ¼ cup milk
  • 1 ½ teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 7 cups challah bread sliced into cubes, lightly packed

Topping

  • ¼ cup brown sugar
  • 1 ½ teaspoon cinnamon
  • 3 tablespoon unsalted butter

Instructions

  1. Preheat the oven to 350°F. Grease a 12 tin muffin pan with cooking spray.

  2. In a large bowl combine. milk, eggs, vanilla, cinnamon, and salt. Pour egg mixture overtop chopped bread pieces. Use hands to toss and make sure bread slices are evenly coated. Evenly divide bread between 12 muffin tins. (about ⅓ cup in each cavity)

  3. Bake in the oven for 25-30 minutes or until tops are golden brown. Serve with syrup and enjoy
