One Pot Lemon Ricotta Pasta

Deliciously creamy One Pot Lemon Ricotta Pasta ready in under 30 minutes.

  • 16 oz Mezzi Rigatoni pasta
  • 1 cup whole-milk ricotta
  • 1 cup grated parmesan plus more for serving
  • juice of one lemon
  • 1 ½ tablespoon lemon zest
  • salt & pepper to taste
  • chili flakes optional
  1. Cook pasta in a large pot according to instructions. Reserve 1 cup of pasta water. Drain pasta and set cooked pasta aside.

  2. In the same pot add ricotta cheese, parmesan cheese, lemon zest, lemon juice, salt, and pepper. Stir. Pour reserved pasta water while stirring until smooth consistency. Add cooked pasta and continue mixing. Serve with red pepper flakes and more parmesan cheese.
