Ingredients
Dry Ingredients
  • 2 cups all purpose flour
  • 2 tablespoon baking powder
  • ¼ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon cloves
  • ½ teaspoon salt
Wet Ingredients
  • 1.5 cups milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoon vegetable oil
Instructions
  1. In a large bowl add all purpose flour, baking powder, brown sugar, cinnamon, nutmeg, cloves, and salt. Mix until well combined. In a separate bowl add milk, pumpkin puree, egg, and vegetable oil. Whisk until well combined. Pour wet ingredients into bowl with the dry ingredients and mix until just combined (do not over mix).

  2. Heat a lightly greased griddle or skillet over medium heat. Use ¼ cup measuring scoop to make batter and pour onto the hot griddle or skillet. Cook pancakes for 1-2 minutes and flip. Continue to cook for 1-2 minutes.
