Ingredients
  • 8 ounces brown rice noodles
  • 2 cloves garlic
  • 2 tablespoon olive oil
  • cup creamy peanut butter
  • 3 tablespoon low sodium soy sauce
  • ½ cup chicken broth
  • 2 teaspoon sesame oil
  • 1 tablespoon sriracha
  • 1 tablespoon maple syrup or honey
Instructions
  1. Cook brown rice noodles according to package instructions instructions. Mince garlic and add to pan, sautee with 1 tablespoon oil (olive oil). Sautee minced garlic on low heat for 2-3 minutes or until garlic starts to brown. Add peanut butter, low sodium soy sauce, water or broth, rice vinegar, toasted sesame oil, sriracha, maple syrup to the saucepan.
  2. Drain noodles, mix peanut sauce and noodles. Toss to evenly combine. Top with chopped peanuts, green onions, and sesame seeds.
