Pre heat oven to 300 degrees F. Line a baking sheet with parchment paper. Add pecans to large bowl. Add egg white to a separate bowl and beat until frothy. Pour egg white onto pecans and mix to throughly combine. Pour cinnamon, maple syrup, and salt on top of pecans. Mix until pecans are fully coated.

Spread pecans onto a lined parchment paper. Cook in oven for 45 minutes, stirring pecans around every 15 minutes.

Remove from oven and allow to cool.
