Warm and cozy White Bean Kale & Sausage Bowl is perfect filling meal for dinner.

Ingredients
  • 2 tablespoons olive oil divided
  • 10-12 oz Italian sausage sliced
  • ½ onion diced
  • 3 cloves of garlic minced
  • 2 15 oz cans white beans drained and rinsed
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 cup chicken broth
  • 4 cups kale stem removed and chopped
  • grated parmesan for garnish
  • crusty bread
Instructions
  1. Smash ⅓ of the white beans using a fork and set aside.
  2. Heat a large pot or Dutch oven over medium heat. Pour 1 tablespoon oil and cook the sausage for 4-5 minutes or until browned. Remove sausage and set aside.
  3. Pour the remaining olive oil into the Dutch oven. Add the diced onion to the heated Dutch oven and cook until softened for about 4-5 minutes. Add garlic for to cook for up to 1 minute.

  4. Stir in the diced tomatoes, ⅔ of the remaining white white beans, thyme, oregano, salt, and pepper.

  5. Pour in the chicken broth and smashed white beans and stir until well combined. Reduced heat to low medium.
  6. Let the mixture cook for 3-5 minutes, should reduce slightly.
  7. Stir in kale and cook for 2 minutes. Kale should start to wilt.

  8. Taste and adjust the seasoning as needed.
  9. Serve hot with topped with parmesan cheese and toasted crusty bread.
