Easy Sheet Pan Chicken Fajitas are an all time favorite any day of the week. Juicy and tender chicken breast strips, colorful bell peppers, and red onion tossed in a homemade fajita seasoning.

Ingredients
Seasoning Mix
  • 2 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 2 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • salt and ground pepper to taste
Fajitas
  • 2 teaspoon olive oil
  • 2 lbs boneless skinless chicken breasts, cut into strips
  • 1 red onion sliced thin
  • 1 red bell pepper cut into strips
  • 1 green bell pepper cut into strips
  • 1 yellow bell pepper cut into strips
  • cup chopped fresh cilantro leaves
  • 2 tablespoon fresh lime juice
  • 6 flour or corn tortillas warmed
Instructions
  1. Pre-heat oven to 400°F.

  2. In a small bowl add seasoning mix. Set aside.

  3. Place red onion, red bell pepper, green bell pepper, yellow bell pepper and chicken breast strips into a large bowl. Drizzle with olive oil and then sprinkle seasoning mix. Use tongs to mix and evenly coat chicken and vegetables. Spread fajita mixture onto the baking pan into an even layer. Use a second sheet pan if needed.

  4. Roast in the oven 18-20 minutes (tossing halfway through). Wrap the tortillas in foil and place them in the oven for the last 5 minutes of cooking fajitas to warm. Remove tortillas from the oven. Drizzle lime juice and cilantro. Serve immediately with warm tortillas.
