Kale Apple Salad with Pomegranate Dressing

Ingredients
Kale Apple Salad
  • kale- destemmed and chopped
  • 2 apples, sliced thin
  • ½ cup pomegranate arils (seeds)
  • ¼ cup feta cheese crumbles
  • ¼ cup pecans
Pomegranate Dressing
  • 2 tablespoon honey
  • ¼ cup white wine vinegar
  • ¾ cup extra virgin olive oil
  • ½ cup pomegranate juice
  • salt and cracked pepper to taste
Instructions
  1. In a large bowl add kale. Place honey, white wine vinegar, extra virgin olive oil, pomegranate juice in a jar. Close the lid and shake dressing until well combined. 

  2. Pour dressing over kale. Toss dressing and kale until kale is well coated.

  3. Add sliced apples, pomegranate, feta cheese crumbles, and pecans.
