I’ve been wanting to use my dutch oven since forever. What better way to put it to good use then by simmering a yummy cauliflower soup.
Several days ago I posted a picture on Instagram of a pan of cauliflower. At that moment I had no idea what I was going to create but knew that I had plenty of options. Cauliflower is VERY versatile (I still have yet to make a good cauliflower crust). Determined to break out the cast iron dutch oven I set out to create a super easy One Pot Cauliflower Soup.
Not gonna lie, I like my soups thick. Thin, broth type soups are fine but something about a hearty thick soup just gets to me. Despite this 50 degree weather, it’s still winter and this cauliflower soup hits every spot for my taste buds. I’m making it last pairing this soup with salads and sandwiches for lunch. This recipe can be done in under 45 minutes with minimal ingredients and is also vegan.
I’m way more excited about the toppings than I should be. Oh, the possibilities! Here I have some hemp seeds and sprigs of thyme and also a nice coconut swirl. Other great toppings include extra pieces of cauliflower, nuts, or cheese, creme fraiche swirl, or bacon for the non-vegan route.
