ONE PAN ROASTED LEMON SALMON AND ASPARAGUS

Have I ever told you I love salmon?

Seriously, I’ll take salmon over any kind of fish any day.  Today I’m featuring One Pan Roasted Lemon Salmon and Asparagus. With under ingredients and no more than 30 minutes this meal can on your plate ready to eat.  This meal is so easy to make, there’s no reason not try it.

One Pan Salmon and Asparagus

Course Dinner
Prep Time 30 minutes

Ingredients

  • 1 lb salmon
  • 1 tablespoon garlic
  • 1 lemon
  • 2 tablespoon parsley
  • ½ pound asparagus
  • salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Pre-heat oven to 425 degrees. Place salmon skin side down on parchment lined sheet pan. Spread garlic and parsley evenly on top of salmon. Season with salt and pepper. Cut lemon into thin to medium sized slices. Place lemon slices on top of salmon.

  2. Cut bottom stems of asparagus (about an inch). Drizzle in olive oil and season with salt and pepper. Place asparagus on sheet pan with salmon (all in one layer).

  3. Roast in oven for 10-15 minutes or until salmon is cooked through.
