Sometimes simple is better. That’s why I love this Easy Peanut Noodle recipe. Instead of take out you can whip up a delicious meal in under 20 minutes that’s bursting with flavor.
What you’ll need:
The main two ingredients of this dish hands down has to be the brown rice noodles and peanut butter. I purchased 2 packs of brown rice noodles at my local grocery store. One thing I always keep in my pantry is peanut butter (a very big container full). There wasn’t much for me to purchase at the store because I already had most ingredients right at home.
There’s a few other ingredients that really bring on the flavor with these peanut noodles. Garlic. sesame oil, olive oil, soy sauce, chicken broth. For spice there a bit of sriracha. To balance everything out there is a touch of sweetness added with honey.
How to make easy peanut noodles.
Start with preparing the noodles. You can prepare the noodles according to instructions. It is super easy them. First add water to a large pot and boil. Guage how much water you need by adding enough water that will at least cover the noodles. Once water reaches a boil remove pot from stove and place to the side. Add in the brown rice noodles. Let sit in water for 5 minutes.
While the noodles are brewing in the pot let’s prepare the peanut sauce. Heat a medium sized sauce pan and add olive oil first and then minced garlic. Sautee garlic for 2-3 minutes or until fragrant and golden brown. Next one by one add the remaining ingredients: peanut butter, low sodium soy sauce, chicken broth, sesame oil, sriracha, maple syrup/honey. Make sure to reserve some water on the side. Give it a good stir to evenly mix everything. Once the peanut butter melts completely add water to sauce to thin out to desired consistency.
Once noodles have been sitting for 5 minutes. Remove from pan and drain. Add the easy peanut sauce to the noodles and mix thoroughly to evenly coat the noodles.
Top with freshly chopped green onion or chopped peanuts and enjoy.
Tips for the best Easy peanut noodles.
This recipe uses brown rice noodles but you can certainly enjoy this dish using any other kind.
Peanut sauce tends to dry easily so add water to sauce as needed to thin out. Reserve sauce or make extra when re-heating noodles.
Add more color with sauteed vegetables like bell peppers. carrots, cabbage.

Ingredients
- 8 ounces brown rice noodles
- 2 cloves garlic
- 2 tablespoon olive oil
- ⅔ cup creamy peanut butter
- 3 tablespoon low sodium soy sauce
- ½ cup chicken broth
- 2 teaspoon sesame oil
- 1 tablespoon sriracha
- 1 tablespoon maple syrup or honey
Instructions

Cook brown rice noodles according to package instructions instructions. Mince garlic and add to pan, sautee with 1 tablespoon oil (olive oil). Sautee minced garlic on low heat for 2-3 minutes or until garlic starts to brown. Add peanut butter, low sodium soy sauce, water or broth, rice vinegar, toasted sesame oil, sriracha, maple syrup to the saucepan.

Drain noodles, mix peanut sauce and noodles. Toss to evenly combine. Top with chopped peanuts, green onions, and sesame seeds.
